  3. Añadimos el huevo, unas gotas de zumo de limón exprimido y una pizca de sal. Ponemos el brazo de la batidora de mano hasta el fondo y batimos.
  4. Cuando ya a penas queda aceite en la superficie vamos levantando la batidora lentamente hasta dejar la emulsión abajo y ya batimos sin temor alguno hasta tener la salsa completamente homogénea.
  5. Es importante que el aguacate que utilicemos esté maduro ya que así quedará una salsa con una textura completamente fina. Un buen complemento para patatas hechas al horno o carne.
