- Mientras tanto vamos haciendo un almíbar, colocamos el azúcar en una cacerola y encima agregamos el agua, no removemos. Lo llevamos a fuego y mantenemos hasta que veamos que está habiendo burbujas y el azúcar se disolvió por completo.
- Agregamos el almíbar al puré en dos partes, para que se vaya integrando más fácil. Llevamos a fuego y cocinamos por alrededor de 10 minutos, tener cuidado ya que hace gorgotones y salta, puede quemar.
- En otro recipiente colocamos el Agar Agar y cubrimos con agua, aproximadamente un cm de agua, lo llevamos a fuego removiendo continuamente hasta que veamos que tomó temperatura y se disolvió por completo. Agregamos esta mezcla al puré y seguimos removiendo sobre el fuego por unos minutos más. Al retirar del fuego agregamos la esencia de vainilla.
- Separamos una parte de la preparación en un bowl y agregamos el cacao y lo mezclamos bien. Luego vertemos en un molde con papel film la preparación sola y por encima la de chocolate e integramos de modo que nos queden las características betas del chocolate en el dulce.
- Dejamos que se enfríe y una vez que perdió temperatura lo llevamos a la heladera. Lo ideal es esperar 24 horas para consumirlo
