  1. Yo he utilizado un molde de plumcake, engrasado con mantequilla y espolvoreado con harina. Precalienta el horno a 180 ºC.
  2. Exprime el medio limón y cuela el zumo. Pela los aguacates, pártelos por la mitad, quítale el hueso y trocéalos, rocíalos con unas gotas de limón para que no se oscurezcan.
  3. Incorpora la harina tamizada con la levadura, poco a poco sin dejar de remover, hasta que obtengas una masa homogénea.
  4. Casca los huevos en un bol añádele el azúcar moreno. Bátelos, mejor con unas varillas eléctricas, hasta que estén espumosos. Agrega dos cucharaditas de zumo de limón y la pulpa de los aguacates, y sigue batiendo hasta que tengas una preparación cremosa. Vierte el aceite en un hilo, sin dejar de remover con las varillas, hasta que esté totalmente integrado.
  5. Vierte la masa en el molde y hornera el bizcocho entre 40 a 45 minutos. Deja templar, desmóldalo y deja que se enfríe completamente.
  6. Prepara la glasa.
    Bate ligeramente el azúcar glas con las claras de huevo y unas gotas de zumo de limón.
  7. Cubre con esta mezcla el bizcocho, ponle pon encima los pistachos troceados y deja que la glasa se endurezca. (Yo lo meto en el frigorífico hasta que endurezca). Sacamos y cortamos a rebanadas. ¡¡Ahora toca disfrutarlo, que está muy rico!!
